Sophomore cheese lab.... Student's took their knowledge of bacteria and made flavored cream cheese. After learning about the different kinds of bacteria, the Biology classes processed cream cheese. Each group sterilized their whole milk and observed the process of making cheese. After coagulating the casein protein in milk and then separating the milk into solid curds and liquid whey. The liquid whey is drained away, and the curds remain in which are flavored with a flavoring of their choice.
